Fruity Rice Krispy Treats

A simple twist on a classic — party pleasers that won't break the budget and disappear in minutes.

Swap the plain crisped rice for a fruity cereal and you've turned a beige childhood snack into something that looks like confetti and tastes like a birthday. Same three ingredients, same ten minutes, roughly the same three dollars.

We make a pan of these for every bake sale, classroom party, and 'I forgot I signed up to bring something' emergency. They have never once come home.

The two tricks

First: pull the marshmallows off the heat the second they're melted — overcooked marshmallow sets up hard and chewy. Second: don't crush them into the pan. Press just enough to hold together; packed-tight treats turn into bricks. Butter your hands and pat, don't mash.

  1. Melt the butter in a big pot over low heat.

  2. Add the marshmallows and stir until just melted — no longer.

  3. Off the heat, fold in the cereal and a pinch of salt until coated.

  4. Press lightly into a buttered 9×13 pan, cool, and cut into squares.
